Italy: The Food & Culture of the Italian Mediterranean
This course combines theory and experiential activities to explore the fundamental principles and elements of the Mediterranean lifestyle. It includes a study abroad itinerary in Italy to immerse students in the culture of food and life in Italy. The trip will be a balance between excursions and interactive educational activities, including visits to tourism destinations, discussions, and demonstrations with local community members about their daily lifestyle, Mediterranean meals and lessons in traditional settings, as well as more formal educational sessions with experts in nutrition and the history of Mediterranean lifestyle.

Excursions
- Explore Italian food traditions and Slow Food practices and reflect on similarities and differences between the
- Mediterranean diet and the standard American diet
- Tour Rome, the Vatican, the Coliseum, and Florence
- Take day trips to a Slow Food farm
- Attend a workshop and cooking lesson on traditional Italian/Mediterranean cuisine
- Tour cheese and prosciutto factories in Bologna and Parma
- Participate in multiple guest lectures with local partners
